If there’s one thing you should know about me is that I LOVE to play in the kitchen! Like, the Food Network is probably my favorite channel ever and I want to be like Julia Child when I grow up. I really do enjoy cooking and baking! When I started this blog, it is something I was really looking forward to share about. I’m so excited that I’ve finally taken the time to put together a simple yet delicious recipe to share with you guys.
At the beginning of the year, I started a 21 day “reset” to detoxify my body and get back into healthier eating habits after indulging so much during the holidays. I’m pretty sure many of you know what happens when we decide to take charge of that matter. Your body just goes insane, throwing a tantrum, screaming for SUGAR. Naturally all I wanted was to satisfy my cravings but also didn’t want to mess up with my fresh reset! I wanted to keep things on the clean side. The recipe I’m about to share with you guys did just that. A clean, rich-tasting dessert with simple ingredients and little added sugar that satisfied my sweet tooth! A gluten-free dessert with no refined sugars. No butter. No flour. No BS. Wait What? Yes! Not only that, it is so incredibly easy and quick to put together. This will probably be my new go-to dessert from now on! Now, it is a chocolate dessert, so not completely guilt free, but you certainly won’t regret indulging a little with this one ! Let’s get cooking!
First things first…
The tart crust! My favorite part. Simply Mix all the crust ingredients together. Almond meal, shredded coconut, salt, coconut oil, agave or brown sugar and one egg. Boom. Mix it all up until the ingredients are well incorporated together into a crumbly texture. Then press it into a tart pan. Bake on 350 F for 15 min. Take it out and let stand for 10-15 min
Next up…
The filling. Boil the coconut milk and put the chocolate in a separate heat safe bowl. Then slowly pour the coconut milk on the chocolate. Add a splash of almond extract and whisk it all up together. Pour it in the tart crust. Add your toppings and voila! Chill for minimum 6 hours or overnight. Enjoy!
INGREDIENTS:
Crust
- 2 cups Almond Meal
- 1/2 cup Shredded Coconut
- 1/4 tsp Salt
- 2 tbsp Agave or Brown Sugar
- 2 tbsp Coconut Oil
- 1 egg
Filling
- 1 13.5oz can of Coconut Milk (the regular kind, do not go with “light”)
- 12oz Bittersweet Chocolate
- 1 tsp Almond Extract
- 1 cup of slivered almonds for topping
I definitely know the feeling! The need for something sweet is real every night lol! This tart is such a great idea, I’ll have to try it!
